Analytical lab Ideas?

I am looking for an interesting new analysis for an upper division analytical chemistry lab (4000 level). The class has access to a GC/MS and HPLC (along with some other instruments, but I am looking for something that mostly involves these two). The analysis can be slightly involved/complicated (low to mid ppm range; can include things like derivitization, purge and trap, etc) but not too much they only get 4 hours a week. I want to stay away from things like drug analysis and the like (to avoid permit issues). If anyone has a favorite analysis from their undergraduate days I would love to hear about it. Thanks.

When I took quant, we had to bring in our own urine to test it for uric acid. YUK! That was in the 80's.

I don't know, how about ethanol in beer? You could try using pure water as a solvent in HPLC and run it thru the GC/MS. Ought to be simple enough. Being computational, I am not so good at this stuff.
