How high should the back splash go behind a chimney style vent hood? ?

I don't think the cabinetry will go all the way to the ceiling but we are putting crown along the top of it.

Since the hood is required to be 28-32" above the range, I would say the back splash should follow that. You can terminate the back splash against the bottom of the hood.
